STIR FRY MEALS
Sweet and Sour Vegetables
(Serves 4)
Ingredients
4 spring onions
1 garlic clove, crushed
4 dessertspoons sunflower oil.
Choose 5 or 6 from the following:
1 pepper, seeded and sliced
100g green beans or mange tout sliced
100g babycorns, thinly sliced
100g button mushrooms
200g courgettes, cut into strips
150g carrots cut into thin strips
4 stick celery
1 small can waterchetsnuts.
Sweet and sour sauce ingredients;
4 dessertspoons honey
4 dessertspoons vinegar
2 dessertspoons tomato puree
2 dessertspoons soy sauce
2 teaspoons cornflour
Method
- Combine the sauce ingredients together in a bowl.
- Heat the oil in a wok or frying pan.
- Add the spring onions and garlic and stir-fry for 1 minute
- Add the prepared vegetabes- the harder ones first and stir-fry for 2 minutes
- Add the sauce to the wok, bring to the boil, making sure the vegetables are coated.
- Serve with freshly boiled rice or noodles (cook according to the instructions on the packet.)
