STIR FRY MEALS


Sweet and Sour Vegetables

(Serves 4)
 

Ingredients
 
4 spring onions
1 garlic clove, crushed
4 dessertspoons sunflower oil.
 
Choose 5 or 6 from the following:
 
1 pepper, seeded and sliced
100g green beans or mange tout sliced
100g babycorns, thinly sliced
100g button mushrooms
200g courgettes, cut into strips
150g carrots cut into thin strips
4 stick celery
1 small can waterchetsnuts.
 
Sweet and sour sauce ingredients;
 
4 dessertspoons honey
4 dessertspoons vinegar
2 dessertspoons tomato puree
2 dessertspoons soy sauce
2 teaspoons cornflour
 

Method


 
  1. Combine the sauce ingredients together in a bowl.
     
  2. Heat the oil in a wok or frying pan.
     
  3. Add the spring onions and garlic and stir-fry for 1 minute
     
  4. Add the prepared vegetabes- the harder ones first and stir-fry for 2 minutes
     
  5. Add the sauce to the wok, bring to the boil, making sure the vegetables are coated.
     
  6. Serve with freshly boiled rice or noodles (cook according to the instructions on the packet.)
