STIR FRY MEALS


Chicken with Ginger & Mixed Vegetables

(Serves 4)
 

Ingredients
 
4 dessertspoons sunflower oil - 1 red pepper
350g Chicken, cubed - 1 dessertspoon grated fresh ginger
1 clove garlic, crushed - 1 tablespoon tomato puree
1 cup green beans, sliced - 2 dessertspoons soy sauce
4 stalks celery, thinly sliced
 

Method


 
  1. Heat 2 dessertspoons of sunflower oil in a wok or frying pan.
     
  2. Add the Chicken and stir-fry for 5 minutes.
     
  3. Add the Garlic, green beans, celery and pepper and stir-fry for 2 minutes.
     
  4. Place the fresh ginger, tomato puree, 2 dessertspoons oil and soy sauce in a small bowl or jug. Mix well to combine.
     
  5. Pour over the chicken and vegetables and fry for a further 3 minutes.
     
  6. Serve with freshly boiled rice or noodles.
