Tuna Pasta Salad with Mint Dressing


Ingredients
 
4oz raw pasta
½ bunch spring onions
4oz cherry tomatoes
1 tin tuna in brine (7oz)
½ green pepper
 
Mint Dressing
1 teaspoon mint sauce
½ pot low fat crème fraiche

Method


 
  1. Cook pasta following instructions on the packet.
     
  2. Drain pasta when cooked and run under cold water until the pasta is cold. Leave to drain.
     
  3. Peel and chop spring onions. Chop tomatoes in half.
     
  4. Mix pasta, onions and tomatoes.
     
  5. Chop and de-seed pepper and add to pasta mixture.
     
  6. Drain tuna and with fork break into flakes.
     
  7. Add tuna. Mix the mint and crème fraiche together.
     
  8. Add mint sauce to pasta and mix well. Serve.
