Tuna Pasta Salad with Mint Dressing
Ingredients
4oz raw pasta
½ bunch spring onions
4oz cherry tomatoes
1 tin tuna in brine (7oz)
½ green pepper
Mint Dressing
1 teaspoon mint sauce
½ pot low fat crème fraiche
Method
- Cook pasta following instructions on the packet.
- Drain pasta when cooked and run under cold water until the pasta is cold. Leave to drain.
- Peel and chop spring onions. Chop tomatoes in half.
- Mix pasta, onions and tomatoes.
- Chop and de-seed pepper and add to pasta mixture.
- Drain tuna and with fork break into flakes.
- Add tuna. Mix the mint and crème fraiche together.
- Add mint sauce to pasta and mix well. Serve.
