QUICK AND EASY SNACKS
Stilton Mushrooms
Ingredients
2 large flat mushrooms
50g (2oz) butter or low fat spread
1 shallot, chopped finely or 1 small onion
100g (4oz) Stilton Cheese
25g (1oz) fresh breadcrumbs
Salt and freshly ground pepper to taste
Method
- Carefully remove the stalks from the mushrooms and chop finely. Wipe the caps with damp kitchen paper.
- Place half the butter in a bowl and microwave on HIGH for 30 seconds, then add the mushroom stalks and shallots and cook on HIGH for 1 minute.
- Leave to cool for 5 minutes, then crumble in the cheese, add the breadcrumbs, salt and pepper and mix well. Divide the mixture between the mushroom caps.
- Place the remaining butter ina a large shallow dish and microwave on HIGH for 30 seconds. Place the stuffed mushrooms in the dish and cook for 2 minutes.
