QUICK AND EASY SNACKS


Stilton Mushrooms


Ingredients
 
2 large flat mushrooms
50g (2oz) butter or low fat spread
1 shallot, chopped finely or 1 small onion
100g (4oz) Stilton Cheese
25g (1oz) fresh breadcrumbs
Salt and freshly ground pepper to taste

Method


 
  1. Carefully remove the stalks from the mushrooms and chop finely. Wipe the caps with damp kitchen paper.
     
  2. Place half the butter in a bowl and microwave on HIGH for 30 seconds, then add the mushroom stalks and shallots and cook on HIGH for 1 minute.
     
  3. Leave to cool for 5 minutes, then crumble in the cheese, add the breadcrumbs, salt and pepper and mix well. Divide the mixture between the mushroom caps.
     
  4. Place the remaining butter ina a large shallow dish and microwave on HIGH for 30 seconds. Place the stuffed mushrooms in the dish and cook for 2 minutes.
