QUICK AND EASY SNACKS


Lentil and Tomato Soup


Ingredients
 
1 tablespoon sunflower oil
1 onion, chopped
1 clove of garlic, crushed (optional)
2 rashers of rindless bacon, chopped
Pinch of mixed herbs
50g/2oz red lentils
1 x 230g (9oz) can of chopped tomatoes
330ml (1/2 pint) vegetable stock

Method


 
  1. Heat the oil in a large pan and gently fry the onion, garlic, bacon and herbs until the onion is soft.
     
  2. Add lentils and cook for a further 2-3 minutes.
     
  3. Add chopped tomatoes and stock and bring to the boil.
     
  4. Simmer for a further 20-30 minutes adding more stock if required.
     
  5. Season to taste and serve with a wholemeal roll.
