QUICK AND EASY SNACKS
Savoury Sandwich Pudding
Ingredients
25g (1oz) butter
6 slices of brown bread from a small loaf
100g (4oz) grated cheese
3 tomatoes, sliced
½ teaspoon made English mustard
Salt and pepper
Pinch of cayenne pepper
½ pint milk (300ml)
2 eggs
Method
- Lightly butter a 1 pint dish.
- Butter the bread. Make 3 sandwiches using 3oz cheese and the tomatoes. Cut each into 4 triangles and arrange in a dish.
- Whisk the eggs, mustard, salt and pepper, cayenne pepper and milk and gently pour over the sandwiches.
- Sprinkle the remaining cheese on top and place near the top of the oven for 45 minutes, until puffed and golden. Serve with a crisp green salad.
