QUICK AND EASY SNACKS


Savoury Sandwich Pudding


Ingredients
 
25g (1oz) butter
6 slices of brown bread from a small loaf
100g (4oz) grated cheese
3 tomatoes, sliced
½ teaspoon made English mustard
Salt and pepper
Pinch of cayenne pepper
½ pint milk (300ml)
2 eggs

Method


 
  1. Lightly butter a 1 pint dish.
     
  2. Butter the bread. Make 3 sandwiches using 3oz cheese and the tomatoes. Cut each into 4 triangles and arrange in a dish.
     
  3. Whisk the eggs, mustard, salt and pepper, cayenne pepper and milk and gently pour over the sandwiches.
     
  4. Sprinkle the remaining cheese on top and place near the top of the oven for 45 minutes, until puffed and golden. Serve with a crisp green salad.
