QUICK AND EASY SNACKS
Mushroom and Bacon Toast
Ingredients
25g (1oz) butter
75g (3oz) bacon - rinded and chopped
100g (4oz) of button mushrooms
1/2 tablespoon chopped parsley
Salt and pepper
4 slices of bread
50g (2oz) full-fat soft cheese
Method
- Melt half the butter in a shallow pan. Add the chopped bacon and fry for 2-3 minutes. Add the mushrooms, parsley, salt and pepper.
- Cover pan and cook gently for 6-8 minutes or until the mushrooms are just tender.
- Meanwhile toast the bread on both sides.
- Spread 2 of the slices on one side with the remaining butter and cream cheese.
- Sandwich in pairs with the remaining slices of toast.
- Spoon the hot mushrooms and bacon over he top.
Garlic Mushrooms on Toast
Ingredients
25g (1oz) butter
100g (4oz0 small button mushrooms
1 large garlic cloves
1 teaspoon lemon juice
1 teaspoon fresh parsley
Method
- Heat the butter, then toss in the mushrooms. Add garlic and cook for 2 minutes.
- Add the lemon juice and season. Cover with a lid and cook gently for 5 minutes.
- Remove the lid and cook for a further 5 minutes until softened. Stir in the parsley and serve.
- Serve as a filling for jacket potatoes, on toast or with hot crusty bread.
