Apple and Cheese Muffins


Ingredients
 
Small knob of butter
2 apples, sliced
2 tablespoons salted peanuts, roughly chopped
2 muffins, split open
50g (2oz) Blue cheese, eg Stilton, Blue Brie
Dolcellate

Method


 
  1. Melt the butter in a small pan and when sizzling toss in the apples and nuts, cook for 4-5 minutes until golden.
     
  2. Spoon onto the open muffin and crumble over the cheese. Pop under a pre-heated grill for 2-3 minutes until bubbling. Eat at once.
