Banana and Date Loaf


Ingredients
 
175g (6oz) stoned, dried dates
1 medium sized egg
450g (1lb) ripe bananas, peeled
225g (8oz) self raising wholemeal flour
1 teaspoon of ground mixed spice
100g (4oz) chopped walnuts

Method


 
  1. Preheat the oven to 180ºC/350ºF/Gas Mark 4. Grease and line a 2lb (900g) loaf tin.
     
  2. Simmer the dates in 100ml (4fl oz) water until soft. Mash the dates with a fork until pureed, allow to cool then beat in the egg.
     
  3. Mash the bananas until smooth, stir in the date mixture with the flour, spice and walnuts.
     
  4. Spoon the mixture into the tin and level off. Bake for 1 hour or until a skewer comes out clean when inserted. Leave for 15 minutes, then turn out on a wire rack to cool.
