QUICK AND EASY SNACKS
Banana and Date Loaf
Ingredients
175g (6oz) stoned, dried dates
1 medium sized egg
450g (1lb) ripe bananas, peeled
225g (8oz) self raising wholemeal flour
1 teaspoon of ground mixed spice
100g (4oz) chopped walnuts
Method
- Preheat the oven to 180ºC/350ºF/Gas Mark 4. Grease and line a 2lb (900g) loaf tin.
- Simmer the dates in 100ml (4fl oz) water until soft. Mash the dates with a fork until pureed, allow to cool then beat in the egg.
- Mash the bananas until smooth, stir in the date mixture with the flour, spice and walnuts.
- Spoon the mixture into the tin and level off. Bake for 1 hour or until a skewer comes out clean when inserted. Leave for 15 minutes, then turn out on a wire rack to cool.
