Vegetarian Shepherds Pie

Ingredients

1 teaspoon oil
½ carrot
½ small onion
¼ pepper
2 mushrooms
¼ vegetable stock cube
1 cup boiling water
100g/4oz tinned tomatoes
25g/1oz dried red lentils
2 teaspoons tomato puree
2 medium potatoes


Method


 
  1. Wash, peel and chop vegetables.
     
  2. Cook the onion and carrot in the oil for 2 minutes.
     
  3. Add peppers and mushrooms and cook for a further 2 minutes.
     
  4. Dissolve the stock cube in boiling water and add to the vegetables.
     
  5. Stir in the tomatoes, lentils and tomato puree.
     
  6. Bring to the boil and simmer gently for 15 minutes or until the lentils are soft.
     
  7. Meanwhile bring a small pan of water to the boil. Add the potatoes and boil for 20 minutes until soft.
     
  8. Drain well and mash. Season if required.
     
  9. Pour the lentil mixture into an ovenproof dish. Cover with mashed potato and cook under a grill for 5 minutes until browned.
     

Cook's Tip
Sprinkle with grated cheese before putting under the grill.
