BALANCED MEALS FOR ONE
Vegetarian Shepherds Pie

Ingredients
1 teaspoon oil
½ carrot
½ small onion
¼ pepper
2 mushrooms
¼ vegetable stock cube
1 cup boiling water
100g/4oz tinned tomatoes
25g/1oz dried red lentils
2 teaspoons tomato puree
2 medium potatoes
Method
- Wash, peel and chop vegetables.
- Cook the onion and carrot in the oil for 2 minutes.
- Add peppers and mushrooms and cook for a further 2 minutes.
- Dissolve the stock cube in boiling water and add to the vegetables.
- Stir in the tomatoes, lentils and tomato puree.
- Bring to the boil and simmer gently for 15 minutes or until the lentils are soft.
- Meanwhile bring a small pan of water to the boil. Add the potatoes and boil for 20 minutes until soft.
- Drain well and mash. Season if required.
- Pour the lentil mixture into an ovenproof dish. Cover with mashed potato and cook under a grill for 5 minutes until browned.
Cook's Tip
Sprinkle with grated cheese before putting under the grill.
