Vegetable Crumble

Ingredients

1 teaspoon oil
½ small onion
1 small carrot
2 mushrooms
1 small potato
50g/2oz tinned beans (kidney, chickpeas, baked beans)
Pinch dry mixed herbs
1 teaspoon tomato puree
200g/8oz tinned chopped tomatoes
25g/1oz margarine
50g/2oz wholemeal flour
25g/1oz cheddar cheese
25g/1oz mixed nuts


Method


 
  1. Wash, peel and dice vegetables.
     
  2. Heat the oil in a saucepan. Cook onion, potatoes and carrots for a few minutes.
     
  3. Add mushrooms, beans, herbs, tomato puree and chopped tomatoes. Bring to the boil and simmer for 20 minutes.
     
  4. Rub the margarine into the flour until the mixture resembles fine breadcrumbs. Add the cheese and nuts. Mix well.
     
  5. Transfer vegetable mixture into an ovenproof dish.
     
  6. Spread crumble mixture on top.
     
  7. Bake in the oven for 20 minutes.
