BALANCED MEALS FOR ONE


Potato Tortilla

Ingredients

1 medium potato
1 rasher bacon
½ small onion
¼ red pepper
1 clove garlic
2 eggs
2 teaspoons chopped parsley (optional)
Black pepper
1 teaspoon oil
25g/1oz grated low fat cheddar cheese



 

Method


 
  1. Peel and slice potatoes. Chop the onion and the garlic. Slice the peppers and dice the bacon.
     
  2. Bring a small pan of water to the boil and add potato slices. Cook for 5 minutes. Drain well.
     
  3. In another pan cook the onion, bacon, red pepper and garlic over a medium heat for 4 minutes.
     
  4. Place the eggs, parsley and black pepper in a bowl and whisk lightly.
     
  5. Heat the oil in a small omelette pan. Add the potato slices and cook for 2 minutes.
     
  6. Add the bacon, onions and peppers to the egg mixture. Pour on top of the potato slices.
     
  7. Cook over a medium heat for 5-8 minutes.
     
  8. Sprinkle with cheese and cook under a pre-heated grill for 2 minutes.
     
Cook's Tip
For variation change the topping. For example: ham, cooked chicken, sweetcorn, tomato, pineapple.
