Shepherds Pie

Ingredients
½ small onion
1 small carrot
2 medium potatoes
100g/4oz minced beef
1 dessertspoonful tomato puree
Pinch mixed herbs
cup boiling water
1 tablespoon gravy granules
Black Pepper

Method


 
  1. Peel and chop onion and carrot. Peel and quarter potatoes.
     
  2. Brown mince in a frying pan. Drain off excess fat.
     
  3. Stir in chopped onion and carrot. Cook for five minutes.
     
  4. Stir in the tomato puree and the herbs.
     
  5. Pour the water into the frying pan and bring to the boil. Sprinkle in the gravy granules, stirring continuously.
     
  6. Cover and simmer for 20 minutes stirring occasionally.
     
  7. Meanwhile bring a pan of water to the boil. Add the potatoes and boil for 20 minutes until soft.
     
  8. Drain off the water, mash until smooth. Season with pepper.
     
  9. Remove the mince mixture from the heat and pour into an ovenproof dish. Spoon the mashed potato onto the meat and spread evenly with a fork.
     
  10. Place under the grill for 5 minutes or until golden and crispy.
