Ingredients
1 rasher back bacon
½ onion
½ carrot
75g/3oz minced lamb
½ beef stock cube
300ml boiling water
75g/3oz dried red lentils
Pinch dry mixed herbs

Method
- Chop bacon, peel and chop onion and grate carrot.
- Place softened bacon and onion in a pan and cook for 2-3 minutes until softened.
- Add the minced lamb and cook, stirring occasionally, until it has browned all over. Drain off any excess fat.
- Make stock by dissolving the stock cube in the boiling water. Add the stock, lentils, carrots and herbs to the lamb mixture. Cover and simmer for 30 minutes until lentils are tender.
