Mustard Herb Chicken

Ingredients
1 chicken breast
½ tablespoon dijon mustard
½ tablespoon low fat natural yoghurt
Pinch dry, mixed herbs
Black pepper
Method
- Remove and discard the skin from the chicken.
- In a small dish combine the mustard, yoghurt, herbs and pepper.
- Place the chicken in an ovenproof dish. Cover with herb mixture.
- Cover dish and bake in the oven for 30-40 minutes or until the juices run clear.
- Drain off any juice before serving.
For a lighter mustard taste use ¾ tablespoon of low fat yoghurt and ¼ tablespoon of mustard.
