BALANCED MEALS FOR ONE


Mustard Herb Chicken


Preparation Time: 10 minutes
Cooking Time: 30-40 minutes
Cooking Temp: 180ºC/350ºF/Gas Mk. 4

To balance the plate serve with
bread or jacket potatoes and
seasonal vegetables or salad.
Ingredients

1 chicken breast
½ tablespoon dijon mustard
½ tablespoon low fat natural yoghurt
Pinch dry, mixed herbs
Black pepper
 


Method


 
  1. Remove and discard the skin from the chicken.
     
  2. In a small dish combine the mustard, yoghurt, herbs and pepper.
     
  3. Place the chicken in an ovenproof dish. Cover with herb mixture.
     
  4. Cover dish and bake in the oven for 30-40 minutes or until the juices run clear.
     
  5. Drain off any juice before serving.
     
Cook's tip
For a lighter mustard taste use ¾ tablespoon of low fat yoghurt and ¼ tablespoon of mustard.
