Fish Cakes

Ingredients
2 medium potatoes
3 dessertspoons milk
Knob low fat margarine (optional)
1 small tin fish (tuna, sardines, salmon)
1 teaspoon lemon juice (optional)
2 dessertspoons chopped parsley (optional)
Method
- Peel and quarter potatoes. Boil for 20 minutes or until soft.
- Drain, mash and add the milk and margarine.
- Drain the fish, mash and add to potatoes. Add lemon juice and parsley and mix well.
- Divide the mixture into portions and shape into cakes.
- Place fishcakes on a layer of tinfoil over the grill pan and grill for 4 minutes on each side
Cook's Tip
For a crispy coating dip the fishcakes in beaten egg and cover with breadcrumbs before grilling.
