salad, baked beans
or seasonal vegetables.
Ingredients

2 medium potatoes
3 dessertspoons milk
Knob low fat margarine (optional)
1 small tin fish (tuna, sardines, salmon)
1 teaspoon lemon juice (optional)
2 dessertspoons chopped parsley (optional)


 

Method


 
  1. Peel and quarter potatoes. Boil for 20 minutes or until soft.
     
  2. Drain, mash and add the milk and margarine.
     
  3. Drain the fish, mash and add to potatoes. Add lemon juice and parsley and mix well.
     
  4. Divide the mixture into portions and shape into cakes.
  5. Place fishcakes on a layer of tinfoil over the grill pan and grill for 4 minutes on each side
     

Cook's Tip
For a crispy coating dip the fishcakes in beaten egg and cover with breadcrumbs before grilling.
