Cranberry Chicken


(Serves 2)
 
Ingredients
 
2 chicken breasts
2 teasp cranberry sauce
2 thin wedges of Brie cheese
2 rashers of back bacon
ground black pepper

Method


1. Preheat the oven to 200C/400F/Gas 6
 
2. Using a sharp knife slit the chicken breast vertically, taking care not to cut right through, to make a pocket.
 
3. Spread the cranberry sauce on the inside of the pocket. Place a wedge of Brie in the pocket; season with pepper and gently press the sides together.
 
4. Stretch the bacon by laying the rashers on a chopping board and drawing a knife along their length. Wrap a rasher round each of the chicken breasts.
 
5. Place the chicken breasts on a greased baking tray and cook in the oven for 20-25 minutes.
 
Serve with a green vegetable, carrots and boiled baby potatoes.
