Cold Weather Hotpot


 
Economical, quick and easy meal for those winter days...


Ingredients
 
250g/8ozs lean minced beef
1 beef stock cube
1 large onion, roughly chopped
175g/6ozs carrots, peeled and thickly sliced
500g/1lb potatoes, peeled and cut into large chunks
3/4pt boiling water
1 small can low salt and sugar baked beans
Splash of Worcestershire sauce
Handful of parsley, roughly chopped (optional)
Pepper

Method


1. Heat a saucepan; add the mince and fry quickly stirring all the time, until evenly browned. Crumble in a stock cube and mix well.
 
2. Add the prepared vegetables, stir them around, and add enough boiling water about 3/4pt, to cover. Bring to the boil, then lower the heat and stir. Cover the pan and simmer gently for about 25- 30minutes or until the vegetables are tender.
 
3. Stir in the baked beans, add the Worcestershire sauce, stir well and heat through. Taste for seasoning; add pepper if required and sprinkle with parsley. Serve extra Worcestershire sauce on the table for those who like a peppery hot taste.
