Fruity Pasta Salad
Ideal to serve as a summer snack or double the quantity for a family picnic or barbecue.
(Serves 2)
Ingredients
150g pasta twists
½ bunch spring onions
1 small pepper
8 cherry tomatoes
2 tinned pineapple rings - natural juice
2tbsp sultanas
1 apple
125g red Leicester or mature cheddar cheese
1 small pot plain low fat yoghurt
Method
1. Cook the pasta according to the instructions on the pack.
2. When cooked, drain in a colander and run under cold water until cool.
3. Meanwhile peel and chop the spring onions. Cut the tomatoes in half and chop the peppers. Cut the pineapple into small pieces.
4. Mix together the cooked pasta, spring onions, tomatoes, Pepper, pineapple and sultanas
5. Core and cut the apple into small pieces. Grate or cube the cheese. Stir the apple and cheese into the pasta mixture.
6. Stir in the plain yoghurt and mix thoroughly. Cover and chill.
7. Serve on a bed of mixed salad leaves.
