Spiced Chickpea Burgers
Summer is here, eating outside, try these quick and economical burgers
Ingredients
440g can of chickpeas
½ onion, grated
1 medium carrot, grated
2 tablespoons Indian relish or pickle
1 tablespoon of tomato puree
2 teaspoons ground cumin
1 teaspoon of ground coriander
3 tablespoons of oatmeal
Flour to coat
Method
1. Drain the chickpeas and pour into a mixing bowl. Mash with a potato masher.
2. Add the grated onion, grated carrot, relish, tomato puree, cumin, coriander, and oatmeal and mix thoroughly.
3. Shape into 4 large or 8 small balls; flatten into burger shapes and coat with a little flour. They can be made in advance and them frozen until needed.
4. Grill, barbeque or fry over a low heat in a teaspoon of vegetable oil in batches for 10-12minutes. Serve in a bun with salad or on its own with salad.
These are a great favourite with children, why not get them to help prepare when they come around. For a spicier option, omit the relish and add red Thai curry paste instead.
