New Potato Salad with Flaked Mackerel
Ingredients
280g small waxy salad potatoes (Jersey Royal potatoes are ideal)
125g green beans, trimmed
2 tablespoons olive oil
2 teaspoons fresh orange juice
¼ teaspoon finely grated orange zest
1 teaspoon white wine vinegar
1 teaspoon whole grain mustard, or to taste
1 tablespoon of chopped fresh chives
Freshly ground pepper to taste
35g watercress
4 spring onions, finely chopped
125g can of mackerel fillets in brine, rinsed and drained
Method
1. Bring the potatoes to the boil in a pan of water. Simmer for 12-15 minutes, adding the fresh beans for the last 5minutes, until both are tender. Drain well: refresh under cold running water and drain thoroughly. Leave to cool completely.
2. Whisk together the olive oil, orange juice, zest, vinegar, mustard, chives and black pepper in a small bowl.
3. Place the cold potatoes and beans in a serving bowl. Add the watercress, spring onions and mackerel and toss gently. Give the dressing a final whisk, drizzle over the salad, toss gently again and serve.
Smoked mackerel can be used instead of tinned.
