Sizzling Sausage Salad



 
(Serves 2)
 
Ingredients
 
1 dessertspoonful olive oil
½ 400g pack of low fat good quality sausages
1 small red onion, roughly chopped
1 heaped dessertspoonful wholegrain mustard
1 dessertspoonful light brown sugar
8 cherry tomatoes
1 little gem lettuce, washed
1 avocado
8-cm/3-inch piece of cucumber
1 dessertspoonful of red wine vinegar

Method


1. Heat the oil in a wok or frying pan. Using scissors, snip the sausages into quarters straight into the pan. Add in the onion, and fry for a minute or two, stirring every now and then to brown everything.
 
2. Spoon in the mustard and sugar, add the tomatoes and cook for a few minutes more, stirring occasionally, until the tomatoes are just beginning to split and the mixture is coated in the sweet mustard glaze.
 
3. Meanwhile, separate the lettuce into leaves, peel, stone and slice the avocado and halve and slice the cucumber. Mix them all together and pile onto a plate. Spoon the hot sausage mixture on top.
 
4. Spoon the red wine vinegar and 1 dessertspoonful of water to the wok or pan and stir it over the heat to dislodge all the tasty flavourings from the pan. Spoon the pan juices over the salad and serve with crusty bread.
