Fruity Chicken Curry
A quick and easy mild curry
Ingredients
1 tablespoon olive oil
1small onion, finely chopped
1 dessertspoonful mild curry powder
2 chicken breasts, cut into bite-size pieces
4 ready to eat dried apricots, roughly chopped
1 medium sweet potato, peeled and diced
20g split red lentils
300ml water
1 tablespoon mango chutney,
Rice to serve
Method
1. Heat the oil in a saucepan, add the onion and cook over a low heat for 5 minutes. Add the curry powder and stir over a low heat for 1 minute.
2. Stir in the chicken, apricots and sweet potatoes until they are coated in curry. Add the lentils and water and heat until simmering. Cover and simmer gently for 20minutes.
3. Stir in the mango chutney and cook uncovered for another 5 minutes.
Serve with basmati or easy cook brown rice and more chutney if required.
