Rhubarb and Orange Crumble


the orange adds an exciting twist to this classic pudding
 
(Serves 2-3)
 
Ingredients
 
350g rhubarb
1 orange
175g light brown sugar
75g plain wholemeal flour
75g plain white flour
75g soft butter or low fat margarine

Method


1. Trim off the ends of the rhubarb and wash. Chop into chunks about 2cm (1inch) long and place in an oven proof dish.
 
2. Wash the orange, grate off the zest then squeeze the juice. Sprinkle half of the sugar onto the rhubarb and pour over the orange juice.
 
3. Rub the butter into the flour and orange zest then mix in the remaining sugar.
 
4. Sprinkle the crumb mixture over the rhubarb and cook in a pre-heated oven 190c, 170c fan oven or gas 5 for 25-30 minutes.
 
Serve with low fat greek yoghurt or custard.
