Salmon and Leek One Pot
Leeks are in season, try this is a quick and easy meal made in the microwave. Serves 2
Ingredients
350g leeks,
3 dessertspoonful of whole grain mustard
2 tablespoons clear honey
Juice of ½ lemon
10-12 cherry tomatoes
2 skinless fillets salmon (175g/6ozs each)
Method
1. Prepare the leeks by thoroughly washing the leeks under the cold tap and slice very finely.
2. Place in a medium microwaveable dish and sprinkle over 1 tablespoon of water. Cover the dish with cling film and pierce a couple of times with a fork. Place in the microwave and cook for 2 minutes. Allow to stand for 1 minute.
3. To make the sauce, whisk the olive oil, mustard honey lemon juice together and season with black pepper.
4. Scatter the tomatoes on top of the leeks and spoon over half the sauce.
5. Lay the salmon fillets on top of the vegetables and spoon over the remaining sauce. Replace the cling film and continue cooking for 6 minutes. Leave to stand for a couple of minutes before serving. Serve with crusty bread to mop up the tasty dishes.
This recipe is based on using an 800-850w microwave if wattage is higher slightly reduce timings.
