Lemon Curd made in the Microwave


 
As Mothering Sunday and Easter is near make this in advance and use as a filling in a Victoria Sandwich for when the family come to visit.
 
Makes approx 2lbs circle


Ingredients
 
Grated rind and juice of 4 lemons
450g/1lb castor sugar
4 eggs, beaten
100g (4oz) butter

Method


1. Place all ingredients in a large bowl. Mix well.
 
2. Cook on High power for 1 minute. Stir. Continue to cook in 1 minute stages until the mixture starts to thicken. Then cook for 30 seconds at a time until mixture coats the back of the spoon. (The eggs will curdle if over cooked).
 
3. The mixture will thicken on cooling. Pot into warm jars. Cover with a circle of waxed paper and a jam pot cover. Cool and store.
 
Also delicious swirled into natural Greek yoghurt as a quick dessert and spread on hot crumpets and toast.
