THE MONTHLY RECIPE - (February 2010)


 

Paprika Pork


Serves 1.
 
Ingredients
2 teaspoons vegetable oil
175g/6ozs lean pork, cubed
1 small onion, finely chopped
1 garlic, crushed
1 teaspoon paprika pepper
A pinch of cayenne pepper
1 small or ˝ large tin of tomatoes
1 tablespoon plain yoghurt
 
Method
 
1. Heat the oil in a saucepan until hot and quickly fry (sauté) the cubed pork until it is browned. Remove from the saucepan.
 
2. Fry the onion and garlic in the remaining oil, until soft.
 
3. Stir in the paprika, cayenne, a little salt and the tomatoes.
 
4. Return the meat to the pan and bring to the boil. Reduce the heat, cover and simmer for 30minutes, until the pork is tender.
 
5. Remove from the heat and swirl in the yoghurt.
 
6. Serve with rice or noodles and a green salad.
