Hearty Beef and Beer Casserole


Rich and comforting for a cold winters day
 
(Serves 1)
 
Ingredients
 
1 dessertspoonful olive oil
200g/7oz lean stewing or braising steak, cubed
Black pepper
1 onions, finely chopped
1 tbsp plain flour
2 carrots, finely sliced
2 celery sticks, finely sliced
1 fresh sage sprig, chopped or ½ tsp dried sage
100g/4oz baby mushrooms, washed
150ml/1/4pt beef stock
100ml/1/8pt beer/lager

Method


1. Heat the oven to 150C/fan, 130c or gas2. Heat the oil in a non-stick flameproof casserole. Season and fry the beef on a high heat. Add the onions, then stir-fry for 5mins. Add the flour and stir to coat the meat.
 
2. Add the carrots, celery, sage, mushrooms and seasoning, then stir-fry for 1-2mins, taking care not to let the flour burn.
 
3. Stir in the stock and beer. Cover and cook in the oven for 1 hour or until the beef is tender.
 
4. Serve with mashed potato and green vegetables.
 
Why not double the quantity and freeze half after cooking and for a special treat substitute red wine for the beer.
