Love Apple Lamb with Mediterranean Vegetables
(Serves 2)
The love apple or tomato as we call it today is the ideal fruit to serve on Valentines Day. The name of originated into Europe from South America where the love apple was thrown by men to their would be suitors indicating their amorous desires.
Ingredients
1 small red onion
1 small red pepper
1 small yellow pepper
1medium size courgette
2 dessert spoonfuls olive oil
2 lean lamb chump chops
2 sprigs of fresh oregano or
½ teaspoon of dried oregano
8 cherry tomatoes
4 fl oz dry white wine or lamb stock
1 dessert spoonful of tomato puree
4 black olives (optional)
Method
1. Peel and chop the onion into chunky pieces. Halve, de-seed and cut peppers into chunky pieces. Trim and slice courgettes thickly.
2. Heat half the oil in a frypan (with a lid); add the lamb chops and brown on both sides. Remove the chops from the pan.
3. Add the rest of the oil, onion, peppers, courgette and oregano and stir and turn the vegetables gently for about 6 minutes.
4. Add the tomatoes, wine or stock and tomato puree. Stir and bring to the boil and simmer Tuck the lamb chops among the vegetables and add the olives. Cover with a lid and cook gently for 15 minutes.
5. Serve immediately with couscous or boiled small new potatoes.
Couscous
Place 125g or 4ozs of couscous in a bowl with ½ teaspoon of mint sauce, cover with boiling water, stir and leave it to stand for 10 minutes.
