Potato and Leek Frittata
(Serves 1)
A frittata is an Italian omelette where the filling ingredients are mixed with the eggs. It is cut into wedges and served hot or cold. Frittata can be eaten as a snack on its own or with salad and crusty bread as a meal.
Ingredients
1 teasp oil (olive or sunflower)
1/4 potato, thinly sliced
1/2 leek, chopped 2 eggs, beaten
1teasp dried mixed herbs, or a tbsp of chopped fresh parsley
Method
1. Heat the oil in a frying pan. Add the potatoes and leeks, and fry for 4-5 minutes or until they have softened.
2. Add the eggs and herbs. Gently stir around the pan until the eggs begin to set.
3. Carefully turn the frittata over and cook for a further minute or place under a hot grill until cooked through.
4. Transfer to a warmed plate and serve immediately.
