Savoury Stuffed Tomato


Serves 1
 
Ingredients
 
1 large beef tomato
4 spring onions
1 clove of garlic, crushed
1 teaspoon vegetable oil
½ green pepper, de-seeded, chopped
15g (½oz) raisins
15g (½oz) walnuts, chopped
½ teaspoon curry powder
Dash of Worcestershire sauce
½ oz cooked rice/cous cous/pulses
Salt and pepper

Method


 
  1. Slice the top off the tomato and scoop out the centre - chop the contents.
     
  2. Place the spring onions, garlic, vegetable oil, pepper and raisins in a bowl. Cover and cook on HIGH for 2 minutes.
     
  3. Stir in the remaining ingredients and the chopped tomato and cook for 1 minute.
     
  4. Pile the mixture back into the tomato and replace its lid.
     
  5. Place the stuffed tomato on a plate and cook on HIGH for 1 minute.
     
  6. Allow to stand for 2 minutes before serving.
