COOKING WITH YOUR MICROWAVE


Beef Mince Strogonoff


Serves 2
 
Ingredients
 
225g (8oz) lean minced beef
125g (4oz) mushrooms, sliced
½ onion, finely chopped
1 tablespoon tomato puree
¼ teaspoon mustard powder
salt and pepper to taste
75ml (2½ fl oz) natural yoghurt

Method


 
  1. Crumble the mince into a large casserole dish. Cover and microwave on HIGH for 3-4 minutes or until meat loses pink colour, stirring once.
     
  2. Add mushrooms, onions, tomato puree, mustard and seasoning. Stir and microwave on HIGH for 5-6 minutes, stirring halfway through cooking.
     
  3. Add the natural yoghurt and microwave on HIGH for 1-1½ minutes, until hot, stirring once.
     
  4. Serve with rice or creamed potatoes and a vegetable of your choice.
