Lemon Chicken


Serves 2
 
Ingredients
 
1 tablespoon sunflower oil
2 boneless skinned chicken breasts, cut into thin strips
2 small courgettes, sliced thinly
1 carrot, sliced thinly
Half a teaspoon grated fresh root ginger
3 spring onions, chopped
1 tablespoon dry sherry
1 tablespoon soy sauce
Juice and rind of ½ lemon
1 teaspoon of cornflour

Method


 
  1. Place oil in a bowl and microwave on HIGH for 1 minute, add the chicken and cook on HIGH for 2 minutes.
     
  2. Add the courgettes, carrots and ginger and cook on HIGH for 3 minutes.
     
  3. Stir in the spring onions, sherry, soy sauce and lemon rind. Cover and cook on HIGH for 3 minutes.
     
  4. Blend the lemon juice and cornflour together, stir into the dish. Cover and cook for 3 minutes until sauce thickens.
     
  5. Serve with boiled rice or noodles and vegetables of your choice.
