COOKING WITH YOUR MICROWAVE
Fish Parcel
Ingredients
1 tablespoon of chopped fresh herbs such as parsley or dill
25g (1oz) butter
1 small carrot, shredded
1 small celery stick, chopped
2 spring onions, chopped
1 tablespoon water
175g (6oz) fish steak or fillet, such as cod or salmon
Method
- Beat the herbs into the butter.
- Place the carrot, celery and onions in a small bowl with a tablespoon of water. Cover and cook for 2 minutes.
- Place the fish on a square of baking paper, large enough to enclose the fish entirely.
- Drain the vegetables and spoon them over the fish. Top with herb butter.
- Fold the paper over the fish and tuck the open ends underneath. Place in a shallow dish.
- Cook for 2-3 minutes. Allow to stand for 2-3 minutes before serving.
