Fish Parcel


Ingredients
 
1 tablespoon of chopped fresh herbs such as parsley or dill
25g (1oz) butter
1 small carrot, shredded
1 small celery stick, chopped
2 spring onions, chopped
1 tablespoon water
175g (6oz) fish steak or fillet, such as cod or salmon

Method


 
  1. Beat the herbs into the butter.
     
  2. Place the carrot, celery and onions in a small bowl with a tablespoon of water. Cover and cook for 2 minutes.
     
  3. Place the fish on a square of baking paper, large enough to enclose the fish entirely.
     
  4. Drain the vegetables and spoon them over the fish. Top with herb butter.
     
  5. Fold the paper over the fish and tuck the open ends underneath. Place in a shallow dish.
     
  6. Cook for 2-3 minutes. Allow to stand for 2-3 minutes before serving.
