COOKING WITH YOUR MICROWAVE


Caribbean Bananas


Serves 2
 
Ingredients
 
25g (1oz) butter
grated rind and juice of ½ orange
¼ teaspoon ground cinnamon
25g (1oz) brown sugar
1 tablespoon dark rum (optional)

Method


 
  1. Place the butter in a microwave-proof dish and microwave for 1 minute until hot.
     
  2. Stir in the orange rind and juice, cinnamon and sugar until the sugar has dissolved.
     
  3. Cook for 2 minutes or until slightly syrupy.
     
  4. Stir in the rum if used.
     
  5. Peel the bananas and cut into 1cm (½ inch) diagonal slices and stir into the orange mixture.
     
  6. Cook for two minutes. Serve with low fat crème fraiche or ice cream.
