BALANCED MEALS FOR ONE
Vegetable Crumble

Ingredients
1 teaspoon oil
½ small onion
1 small carrot
2 mushrooms
1 small potato
50g/2oz tinned beans (kidney, chickpeas, baked beans)
Pinch dry mixed herbs
1 teaspoon tomato puree
200g/8oz tinned chopped tomatoes
25g/1oz margarine
50g/2oz wholemeal flour
25g/1oz cheddar cheese
25g/1oz mixed nuts
Method
- Wash, peel and dice vegetables.
- Heat the oil in a saucepan. Cook onion, potatoes and carrots for a few minutes.
- Add mushrooms, beans, herbs, tomato puree and chopped tomatoes. Bring to the boil and simmer for 20 minutes.
- Rub the margarine into the flour until the mixture resembles fine breadcrumbs. Add the cheese and nuts. Mix well.
- Transfer vegetable mixture into an ovenproof dish.
- Spread crumble mixture on top.
- Bake in the oven for 20 minutes.
